Rhuberry Crisp.

Here's mine.


When it comes to simplicity this is the one.

In no time at all you will find that it's done.

And yet it's delicious when served-up with cream,

And your guests will be gasping 'Why! This is a dream!'

You've never known rhuberries? Well, that's a ruse

To say that two fruits are the ones that you use.

Rhubarb and strawberries, what a great mix.

That's why it's so tasty and easy to fix.

First switch on your oven to make sure it's ready,

Then slice up the fruit with a hand that is steady!

Now combine the cut fruit with some cornflour to start;

Then cinnamon, sugar and rind play a part.

The dish that you're using should be lightly greased;

Make sure it's a smart one for serving the feast.

Mix flour, oats and sugar; that part is a cinch.

And, finally, cinnamon, only a pinch.

(Some may require salt but it isn't a must.)

Now just butter is needed to finish the crust.

Rub the butter in gently till 'breadcrumbs' appear

Then sprinkle it all. (Coffee time's nearly here!)

Bake at average heat, for a half hour, no more.

Good timing! Your guests have appeared at the door!

The aroma of fresh fruit will greet all their noses

And you, clever cook, will be coming up roses!


  • FILLING:6 cups sliced rhubarb. 2 1/2 cups halved strawberries. 3/4 cup granulated sugar.
  • 3 tablespoons cornstarch. 1 teaspoon grated orange rind. 1/2 teaspoon ground cinnamon. Oil or spray.

  • TOPPING:2/3 cup all-purpose flour. 1/2 cup packed brown sugar . 1/2 cup regular oats. 1/4 teaspoon ground cinnamon. 6 tablespoons chilled butter.
