Cerise Feast



MY TRUE COLOURS suggests 'CERISE' for this week.
The word 'cerise' comes from the French and it means 'cherry' so what better contribution than a recipe for a French cherry confection?

CERISE FEAST

Everyone loves a touch of France , particularly the cuisine.
Whenever a friend produces some, I feel really mean!
Well, here we have clafoutis (don't ask me how to pronounce it!).
I only know that you'll swell with pride when you're about to announce it.
'I'll just slip into the kitchen and get my French confection.'
(You have to say it casually as they blink in your direction.)
'When I was last in France' you say, 'It was the latest thing.
I made it for my Gallic friends and they were most flattering!'
The fact that it's pretty easy and  instructions aren't excessive
Need not bother you at all! You'll still sound impressive.

Put the cream in a little saucepan over very gentle heat;
Then add a taste of vanilla; the real thing's hard to beat.
Then add the milk and cool it. (Vanilla pod must be strained.)
See! You're cooking like a French chef, one who's very highly trained!
Whisk the eggs with flour and sugar and stir into the milk.
The mixture should be creamy with the shiny look of silk.
Now add a tiny splash of kirsch, if you're the tipling type,
 As well as all the cherries, looking bountiful and ripe.
You've brought the oven up to heat already. (Please say yes!)
Now bake the mixture for half an hour, maybe more or maybe less.
When the clafoutis is golden-brown and crispy on the top,
You'll know that it is finished and it's time for you to stop.
And you'll agree that haut cuisine is working like a dream!
So, sprinkle with icing sugar and serve with some pouring cream.
When you're guests are eating it they'll say 'Wow! You're a star'
Unless they're feeling rather French and shouting 'Ooh la la!'

Ingredients:
185ml (3/4 cup) double cream. 1 vanilla pod. 125ml (1/2 cup) milk.  3 eggs. 
60g (1/4 cup) caster sugar. 85g (2/3 cup) all-purpose plain flour.
1 tbsp kirsch.  450g (1 lb) cherries. Icing sugar

Sigh.... it sounds soooo tempting.
Even tho' my wife will not permit me to have a go at that (even if Doc permits Grrrrrrr)
