Pumpkin Pronto!



PUMPKIN PRONTO!


What a sweet and sassy treat!
Everyone will want to eat
This pumpkin pie with ginger laced.
Every table should be graced
With such a veritable feast!
A lot of trouble? Not in the least!
Ready-made pastry does the trick
And helps you to be double-quick!
The oven is already hot
(You're efficient, are you not!)
Pumpkin, cooked, is first in line,
Mashed until it's creamed and fine.
Then add sugar, salt and spices,
Now a thorough mix suffices.
To this add evaporated milk
And two eggs, beaten soft as silk.
Pour into the pastry case,
In the heated oven, place.
In fifteen minutes hear the bell;
Your timer's served you very well.
Your pie is certain to impress
When a dob of cream adds to success.

Ingredients
1 1/2 cups pumpkin puree  One cup sugar  1/2 teaspoon salt 1 2/3 cups evaporated milk 
1/2 teaspoon each ground ginger allspice  cloves and nutmeg
1 1/2 teaspoon ground cinnamon 1 unbaked pastry shell 
2 beaten eggs

Chrissy Crisps




CHRISSY CRISPS

The colours of Christmas are red and green
So these tarts will be sure to enhance the scene.
Not only that but they'll add a bite
To revive your palate on Christmas night.
After all those fruity pies,
A savoury tang will be a surprise.
Tart cases first must be made or bought.
(I'm lazy; I use the commercial sort.)
Chilli jam may prove hard to find,
But Asian shops stock the nicest kind.
Put a dab of jam in each tart-case
Covering almost all the base.
Then take the goats cheese, be generous now,
(It's more tangy than cheese from a cow!)
Slice cherry tomatoes (red to the fore).
Pepper and salt!........ There's a knock at the door!
Be artistic! Add bay-leaf or mint
To add the Christmassy greenery hint.
One important thing to note about these
Is that pastry may soften with added cheese.
So prepare these treats only just before eating
It won't take long; they don't need heating.
Festive! Easy! What could be better
You're bound to receive a Thankyou Letter!

2-3 tbs chilli jam 12 mini tartlet shells 150g soft, herbed goats' cheese
12 cherry tomatoes 12 small basil or mint leaves.

Zapped Chook



With thanks to The Australian Seniors' Newsletter. This looks like an easy Xmas lunch!

ZAPPED CHOOK!

A little Australiana in the title!
You may not find it in a Cookery Book.
But I'm sure you realise I mean a Chicken;
One of Australia's favourite words is 'chook'.
Take an ordinary chicken, but a fresh one,
And wash it very well inside and out.
Pat it dry then find an oven bag to fit it
(Something no kitchen ever is without.)
Throw in a little cornflour for the lining,
Then a packet of onion soup of any kind.
Shake the bag until the oven-bag is powdered
It only takes a second you will find.
Place the oven-ready chicken in the packet.
(Good heavens! Preparations are complete!)
You can even chat to neighbours as you do it!
It's a recipe that's very short and sweet.
Now comes the clever part! It's even easier!
If the chicken's Number 14, let us say,
Number fourteen's in the rest of the instructions!
No need to mess with scales! No need to weigh!
Breast-side up microwave for 14 minutes.
Breast-side down repeat the length of time.
In less than half an hour you'll have a chicken
That's scrumptious and particularly sublime!
And you are quite relaxed and quite unflustered
Because you're left completely off the hook.
A few veggies and you'll serve the perfect dinner!

Cruncheese






The best thing about these biscuits is that one eats them at any time,
Even while reading a book in bed, eating them's not a crime!
But they're even better with coffee, better still with a glass of wine,
And the special bite they offer is absolutely divine!
Heat your oven early; preparation time is brief,
 Which, in these rushed and hustled times is a merciful relief!
Beat butter, salt, sugar till creamy; add egg and cheese and mix;
Then fold in flour and chilli.  (It's very easy to fix!)
Roll the mixture into little balls and with a fork  press down
Then bake at 160 till the biscuits are golden brown.
This should take about twenty minutes. Now try one! I know you'll say
'These are tremendous biscuits! I'm going to open a cafe!'

Ingredients:

160 gm. butter   90 gm. sugar   1/4 tsp. salt  1/2 egg    3 slices of  Cheddar cheese  cubed
200 gm. Plain flour    1 tsp. baking powder   3/4 tsp. chilli powder

PS. If you double the amount you make a whole egg will be used!
(But seeing you halve a raw egg should  keep your family amused!)
